It’s no secret I’m more of a preparer than a cook. Or cooker-person, as my grandmother used to say! My dinners are more assembly than actual cooking, but I’m totally okay with that, and no one goes unfed around here.
I shared this super-simple (like embarrassingly simple) dish on my Instagram Story awhile back, and I’ve had so many requests to repost it, that I figured I’d share it here (with a video!!). Turns out y’all are preparers, too!
It’s not even a real recipe, but rather a bunch of ingredients I threw together and my family loved. We refer to it simply as ‘Olive Chicken’, and it’s requested at least once a week. Considering it only takes about 20 minutes, is healthy and hearty, I’m always happy to oblige!
Mediterranean Chicken Pasta with Olives
[What You Need]
1 Sweet Onion, chopped
1 tsp Garlic, minced
2 cans Diced Tomatoes, Italian blend, undrained
2 cups Cooked Chicken, chopped or shredded
1 cup Kalamata Olives, pitted
Olive Oil to taste (I use about a 1/4 cup)
Balsamic Vinegar to taste (I used about 1/2 cup)
Olive Juice to taste (I used about 1/4 cup)
Favorite pasta, cooked
[What You Do]
1. Sauté onion & garlic in olive oil until soft
2. Add remaining ingredients and simmer over medium heat until hot
3. Serve over your favorite pasta and top with parmesan cheese. Or skip the pasta and it’s Whole 30 approved!

Obviously we’re a family of olive-lovers. And balsamic vinegar! Make sure you use the good stuff, though, it really makes a difference. I always buy the big bottles of olive oil and balsamic from World Market…the price can’t be beat for the quality!

Biggest challenge for busy people/moms is what to have for dinner each night. End of day, tired, hungry. I think moms used to call it the “bewitching hour”, ha,ha.

I can’t wait to try this. I love olives! We’ve traveled some and I discovered that I love Mediterranean food. Nothing better than seeing all those olives on the breakfast bar.

Holly Lacey, Is the instant pot a crockpot. If so did you put it on low and for how long? Were your noodles cooked and your chicken?
