Yum | Hearty Taco Soup

Happy Monday, lovebugs! Are you enjoying an extra day off for the holiday weekend, or is it business as usual? We traded our flip-flops for snow boots, and headed to Winter Park for a quick family weekend of fun in the snow. We haven’t seen so much as a flurry all season in Texas, but Colorado is more than making up for it!

There’s a lot of skiing and tubing on the itinerary, with frequent hot chocolate breaks…because, baby it’s COLD outside! The kind of cold that makes you want to hunker in with Netflix and a pot of chili!

Even though we haven’t had any snow days at home, this Taco Soup recipe is one I reach for often. It’s hearty, delicious, nutritious…and most importantly, super easy to prepare!

Hearty Taco Soup

[INGREDIENTS]
1 lb ground beef or turkey
1 sweet onion, diced
1 pack Brandless Taco Seasoning
1 pack Ranch Seasoning Mix (trust me!)
1 15oz. can diced tomatoes
1 15oz. can Brandless Tomato Sauce
1 can Rotel
1 can corn (I use frozen corn)
2 cans Brandless Kidney Beans

[DIRECTIONS]
1. In large saucepan, saute onion in Brandless EVOO
2. Add meat and cook until brown
3. Add remaining ingredients, simmer 30 minutes – 1 hour

I treat it like chili, and serve with shredded cheese, jalapeños, and cornbread. This Brandless Gluten-Free Cornbread Mix is really delicious (and we aren’t even a gluten-free house!)…the muffins are fluffy and moist.

    Just a question about packages sizes. Checked out some of the items on the Brandless site and noticed that chip and snack packages sizes seem small, along with the peanut butter jars and so on. The lower price does seem to justify ordering more than one item, but we have a fairly large family (10 of us when all are home and we need purchase such items).Does this company offer larger sizes on some items or plan to do so?

      Most of the packages I’ve tried are standard size…def not mini or bulk. (Except the granola bars, there’s only 3/box.) I’m not sure if they have plans for bulk or not, but that would be great!

    Made this last night, SO GOOD, 5 stars all the way! Easy, quick (I simmered 30 minutes only after bringing to a slight boil) satisfying and oh so yummy. Used can corn not frozen and drained/rinsed my kidney beans. Sided with cornbread. Eating more today for lunch at work, delicious. My husband wants to know when we’re making again. Sorry, I don’t mean to sound obtuse, I just didn’t know it snowed there. I live in Colorado, have for the past 25 years and right now I’m wishing I lived in Texas because we are getting a blizzard the likes of which I have only seen once before. EVERYTHING is closed due to blizzard conditions.
