Tortellini & Sausage with Cream Sauce

The big Winter storm finally made it’s way south, and we are enjoying a ‘snow day’ today! Except we didn’t get any real snow, we just iced over…but it was enough to cancel school, and that’s all that matters! We knew it was coming, so the kitchen is well-stocked for all our favorite cold-weather, comfort dishes…including this hearty Tortellini & Sausage in Cream Sauce.

Hi Sugarplum | One Pot Tortellini & Sausage

This is one of my go-to meals on busy nights (when isn’t a night busy?!) since it assembles quickly and cooks in a single pot.

Hi Sugarplum | One Pot Tortellini & Sausage

{What You Need}
1 lb. package of smoked Turkey Sausage (pre-cooked meat…a working mom’s best friend!)
1/2 chopped onion
20 oz. package cheese tortellini, refrigerated or frozen
2 14 oz. cans of diced tomatoes in juice
1 14 oz. can of chicken broth
4 oz. cream cheese
1 package fresh spinich
salt and pepper to taste
{What You Do}
*Slice the turkey sausage and sauté it, along with the onions, in olive oil until browned.
*Add tomatoes, chicken broth, and tortellini. Bring to boil, stirring often.
*Add spinach, cover and simmer on low until pasta cooks to al dente. (About 15 minutes, or until you finish a glass of wine…it was a busy day, remember?)

*Turn off the heat and add cream cheese. Recover and let sit for 10 minutes before stirring. 
*Serve hot with a big crusty bread, and watch the dish disappear!
