The big Winter storm finally made it’s way south, and we are enjoying a ‘snow day’ today! Except we didn’t get any real snow, we just iced over…but it was enough to cancel school, and that’s all that matters! We knew it was coming, so the kitchen is well-stocked for all our favorite cold-weather, comfort dishes…including this hearty Tortellini & Sausage in Cream Sauce.

This is one of my go-to meals on busy nights (when isn’t a night busy?!) since it assembles quickly and cooks in a single pot.

{What You Need}
1 lb. package of smoked Turkey Sausage (pre-cooked meat…a working mom’s best friend!)
1/2 chopped onion
20 oz. package cheese tortellini, refrigerated or frozen
2 14 oz. cans of diced tomatoes in juice
1 14 oz. can of chicken broth
4 oz. cream cheese
1 package fresh spinich
salt and pepper to taste
{What You Do}
*Slice the turkey sausage and sauté it, along with the onions, in olive oil until browned.
*Add tomatoes, chicken broth, and tortellini. Bring to boil, stirring often.
*Add spinach, cover and simmer on low until pasta cooks to al dente. (About 15 minutes, or until you finish a glass of wine…it was a busy day, remember?)
*Turn off the heat and add cream cheese. Recover and let sit for 10 minutes before stirring.
*Serve hot with a big crusty bread, and watch the dish disappear!

This looks delicious…but I must ask….WHY OH WHY ARE YOU EATING IT OUT OF SUCH A TINY LITTLE TEACUP? GET A BOWL SISTER!!!!!!
what she said haha! ^^
My anger about your lack of a bowl could have something to do with the fact that MAMA NEEDS A CARB.
Yum!!
Ohh, this looks so good and perfect for a cold winter night!
This looks wonderful!!! Is there an easy way to save it to Pinterest?
Thanks Beverly! You can hover over the image and a 'pin it' button should pop up…or you can use a pin it bookmarklet you install on your own computer. xo
Yum! what size package of spinach my dear? 🙂
oops! It's just the standard 'salad bag' size! 😉 Or a few cups, whatever you like. It was just my sneaky way of getting veggies in the recipe! xo
