{Yum} Easiest Ice Cream Cookie Sandwiches. Ever.

Somehow this Summer I managed to make it through 16 flights, 12 check-point securities, a train, a ship, and countless Uber rides, without so much as a single sniffle or pain…but the last day of Summer break rolls around, and I come down with a wicked cold. I guess it’s back-to-school-itis, which if you’re wondering, is a real thing. #exceptitsnot

I can’t see through my watery-eyes, and I’m mouth-breathing like a beast, but that didn’t stop me from whipping up our favorite easy-breezy Summer dessert this weekend…ice cream cookie sandwiches.

{What You Need}
1 Package of Large Cookies (or make your own, but why?)
1 Pint Ice Cream (I chose Cherry Garcia, because duh!)

{What You Do}

*Using a sharp, serrated knife, cut the ice cream in rings…yep, right through the package.

*Continue cutting 1-inch slices until you get to the cap…about 6 slices.

*Place a slice of ice cream on the underside of a cookie and peel the package off.

*Top with another cookie and smoosh together.

*Serve to your friends and family and bask in their praise.

It really doesn’t get any simpler, and takes less than five minutes. And if your family has that thing called self-control, and for some reason you don’t eat the whole batch in a single sitting, just wrap the leftovers individually in clear wrap, and store in the freezer. #whatareleftovers

The other great thing is the countless cookie and ice cream combinations you can create! This batch was brownie cookies with cherry garcia…we’ve also made chocolate chip cookies with chocolate ice cream, and sugar cookies with strawberry ice cream. #gitinmahbelly

    Ok how easy is this?! I never have thought to cut through the container of ice cream. My oldest has been saying all summer "When Blue Bell is back we need to make ice from sandwiches." She will love this idea! Feel better soon!
