{Git in Mah Belly} Fruit Sorbet

Fortunately I’m not married to a ‘Meat-and-Potatoes’ man, so we have a lot of dinners consisting of just produce during the summer. And while I can inhale chocolate with the best of them, it’s probably a better idea to have a light dessert occasionally (hello? swimsuit season?! Love the swim, not the suit.).

I put the strawberries and blueberries in the blender (yes I took the hats off the strawberries mother!) for just a quick ‘pulse.’ I prefer them a little chunky. Then I made a simple mint syrup using a few tablespoons each of water and sugar, and a twig of the mint that seems to be taking over my back yard. (Note to self: plant mint in container next time, not willy-nilly in flower beds.) Simmer this until the syrup is the amount of mintiness you like.

Mix the fruit and syrup and pour into this genius contraption (also known as the Cuisinart Ice Cream maker):

Watch it do it’s magic for 20-30 minutes, while trying to limit the number of times you stick your finger in it for a taste. (That’s what she said. I’m sorry, I can’t help myself!!)
