Mr. Sugarplum is easily impressed by me. I guess it’s the whole, ‘Love is Blind’ theory, but he’s always bragging on me and thanking me for all the little things I do (he thinks everything is harder than it is, so I don’t correct him!). But when I made these Peanut Butter Ice Cream Cookie Sandwiches, he was convinced I was full-on Martha Stewart, ready for my own show.
Mr. SP: “You made these?”
Mr. SP: “You made these????”
Mr. SP: “YOU made these?!? These are freakin awesome! I thought you bought them at a dessert shop! You could totally sell these! YOU MADE THEM?!”
I couldn’t understand what the kids were saying since they were shoving cookies in their mouths too fast. And I’m not kidding when I tell you a 15-minute conversation ensued about these cookie sandwiches and me quitting my job to sell them (after a little math, we determined I’d have to sell like a million to actually live off them). I started to feel a little guilty because he practically assumed I cranked out my own cream, not just flipped a switch?! (Don’t be silly, not guilty enough to set the story straight!?!)
So, if you’re prepared to be lavished with praise and love, I’ll share this incredibly time consuming, carefully crafted gourmet recipe with you:
1 1/8 cup peanut butter
3/4 cup granulated sugar
1 1/4 cup whole milk
2 cups heavy cream
1 1/2 teaspoon pure vanilla extract
In a medium mixing bowl, use a hand mixer or whisk to combine peanut butter and sugar until smooth. Add the milk and mix on low until sugar dissolves. Stir in the heavy cream and vanilla. Pour into machine, flip the switch and wait 30 minutes!
(Of course it involves the Cuisinart Ice Cream maker! Doesn’t everything I make?!)
I got a little excited and forgot to read the instructions before dumping everything in the bowl at once and mixing. I don’t
care think it made any difference.
Good way to bribe helpers if you need one:
Oh yeah, you’ll need completely cooled cookies too. You can make your faves, or like in my case, let Nestle do what they do best and pop those perfectly round dough balls in the oven. (aka, slice ‘n’ bake) Don’t get all hoighty-toighty…I told you Mr. Sugarplum was easily impressed! And after all, I was making homemade ice cream….let’s not get carried away and expect homemade cookies too!!??
Next comes the extremely tricky part, one that will test your culinary abilities. Spoon a blob of ice cream on a cookie, and top it with….wait for it….another one!
I wanted to protect these precious babies, so I wrapped them in wax paper, then Saran Wrap. The ice cream is still soft, so don’t go sitting on them or anything.
I placed the golden
tickets cookies in a freezer Ziploc overnight for everything to firm up. (that’s what she said!)
That was the hardest part, waiting overnight before eating them! The next day, the wax paper peeled off easily and I presented them to my family on a silver platter befitting of their goodness.
